Simple Simon Flourless Chocolate Cake

This is a “self-made” recipe I came up with after finding out I can’t eat flour due to gluten!!!!

As I do love to eat cake occasionally, this is a simple but incredibly tasty treat – quick to make, and quick to demolish especially with the kids around! And to top it off – it’s made from one of my favorite chocolates!

Ingredients:

200g 70% Lindt Dark Chocolate

200g salt free butter

200g caster sugar

4 eggs

 

Method:

 

  • Melt the chocolate and butter in a bain-marie until nice and smooth and let this cool a bit
  • Separate the eggs into yolks and whites into 2 separate bowls
  • In a food mixer, mix 100g sugar with the yellows until creamy in complexion
  • Now gently fold the egg yolks and sugar mix into the chocolate
  • Clean the mixing bowl, add the egg whites and sugar and beat until soft peaks
  • Very gently fold the egg white and sugar mix into the 1st mix of ingredients until all chocolaty
  • Grease a 20cm cake tin with butter, and pour the cake mix into this
  • Cook at 165deg for approx 35mins
  • Serve warm with ice-cream or cream, or… when cool, it goes very gooey!
