Food Processor with its mini bowl insert and blade
INGREDIENTS:
1 cup dates (I like medul)
1 cup finely ground blanched almonds
1/4 cup finely ground coconut
1 tsp ground ginger
zest & juice of half an organic lime (and whatever fruit pulp you can scrape off)
pinch of salt
a dozen dried cranberries
INSTRUCTIONS:
Place everything except the cranberries into a food processor's mini bowl and pulse until it forms clumps (dough like). Put on gloves, take a spoonful, add 2-4 cranberries to that spoonful, and form it into a ball in the palm of your hands. The ball is done when it's smooth and shiney. Place it aside preferably on a bed of finely ground coconut and serve. You can freeze these for even more flavor fun weeks later.
