Some days you just need something sweet and these dial it in perfectly.
INGREDIENTS:
Butter – .5LB / 230g
Caster Sugar – 3/4 cup / 170g
Vanilla extract – 1 tsp
Flour – 2 1/3 cups / 333g
Salt – .5 tsp
Raspberry jam with seeds – 12oz / 354ml
Granola – 2/3 cup
Sliced Almonds – 1/4 cup
PREPARATION:
Let the butter get to room temp
Take out the Kitchen Aid mixer with beater blade
Greased 9 inch / 23 centimeter baking pan
Medium bowl for mixing the dough with the granola
Preheat the oven to 350ºF / 180ºC
INSTRUCTIONS:
Place butter into mixer on low for 10 seconds
Add sugar and vanilla while mixer is on low speed
Add flour and salt slowly to the mixer (still on low speed)
When combined, the dough is ready (takes only a few seconds) place 2/3 of the dough into the base of the greased pan and press it into place as the bottom crust or base layer. The rest of the dough goes into the bowl.
Add jam onto the base layer and spread but not to the edges
In the bowl, mix the remaining dough, the granola and almonds with your hands briefly
Pinch pieces of dough off and sprinkle them onto the jam in the baking pan
Place in the oven at 350ºF / 180ºC for 45 mins
