Ted’s Lemon Souffle Pancakes

Probably one of the best breakfast meals ever is Lemon Souffle Pancakes.

Mind you that this is not rocket science but it takes a bit more effort than preparing crepes or standard pancakes but from our experience with this recipe.. it’s well worth the effort. I think I’m starting to drool just thinking about these delicious treats.  The down side is that the cook will likely get short-changed by  being behind the stove preparing the next batch while guests are nibbling away and making happy eating noises. Our quest for the best pancakes ever ended in 1997 when the forerunner of this recipe won a prestigious B&B award in Vermont at the hands of a master breakfast chef named Robert Eichorn. I then took my notes and swapped out a few ingredients that were not readily available in Switzerland and voila, we have our own award winner. Ingredients:
3 Jumbo Eggs (>70g), separated
450g low fat cottage cheese (1 large container)
1 TBS REAL maple syrup (very important)
2 tsp lemon zest (the outer colored portion of the citrus peel)
1 lemon (squeezed to get every last drop of juice)
strips of lemon zest for decoration
2 TBS vegetable oil
2 tsp baking powder (sifted)
half cup white flour
pinch of salt
150g vanilla yoghurt (1 small container)

Preparation:
1) Put egg yolks, cottage cheese, yogurt, syrup, lemon zest, lemon juice and veg. oil into a blender for 20 secs.
2) Add baking powder, flour & salt.
3) Process for 10 secs

4) In a large bowl, beat the egg whites until they just hold stiff glossy peaks then
5) slowly add the batter and fold the egg whites gently into it

6) Cook in hot pan for approx 3 minutes per side until the pancakes are golden and serve immediately with lemon strip garnish and plenty of syrup.
