INGREDIENTS:
- 2 large ripe tomatoes, quartered & cored
- 1 cucumber, peeled & cut into 3cm lengths
- 1 small onion, quartered
- 1-2 garlic cloves
- 1 sweet green bell pepper, seeded
- 3 cups tomato juice (fresh is better than canned)
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- a splash or two of marie sharp hot sauce (optional)
- salt & pepper to taste
INSTRUCTIONS:
Vitamix on high for approx 1 minute until smooth.
Garnish with celery, basil, or cilantro leaves and chill.
Serve cold over chopped cucumbers and tomatoes; breadcrumbs optional
