INGREDIENTS:
5 c water
3-4 TBS Aka Miso (red soy bean paste)
3 TBS dried shaved bonito flakes (1pkg)
1 tsp instant dashi or 15cm x 15cm piece of Konbu
3 scallions (small spring onions) chopped
6 small to medium shiitake mushrooms sliced (optional)
.5 pkg tofu cut into 2cm squares
1-2 b somen (very thin white noodles bundled in center)
INSTRUCTIONS:
Cut out and discard shiitake stems and slice thinly then bring to a boil in water. Just before boiling, add miso, bonito, konbu/dashi, half or more of the scallions, & tofu.
Reduce heat and simmer for 5-10 mins.
Meanwhile: cook somen as per pkg directions.
Remove from heat and allow bonito flakes to settle to bottom. Pour through a strainer over somen and top with fresh scallions
