INGREDIENTS:
- 1/3 cup sugar
- 3 TBS cornstarch
- 3 pinches salt
- 1.75 cups whole milk
- .5 cup cream or half/half
- 2 large egg yolks
- 1 TBS butter
- 1.5 tsp pure vanilla extract (or a packet vanilla sugar + the insides of .5 vanilla bean)
INSTRUCTIONS:
- Mix cornstarch, salt, and sugar well everything in a medium saucepan then add the milk and cream and egg yolks (everything except the butter and the vanilla)
- Bring to a light boil using medium heat
- Use a wooden spoon or a whisk to stir slowly and constantly so that there is no clumping
- Continue for 2 mins after the first bubbles appear
- pour into a bowl, a pie tin, or a ramekin and chill it
if you don't want skin to form on top, cover with plastic wrap after the bowl cools to room temp (before you place it into the fridge).
