pumpkin soup

Orgasmic Pumpkin (soup)

This is one of the best soups ever. It's hearty, fulfilling, delicious, zangy, even a bit spicy... Try it out today, it's a delight.

INGREDIENTS:
1 kg peeled pumpkin
2 shallots
75 g ginger
a few sprigs of fresh herbs , such as chives, mint
extra virgin olive oil
1 litre organic vegetable or chicken stock (2 jars of fond + water)
200 ml coconut milk , plus a bit extra to serve
½ tablespoon chilli powder
1 lime

INSTRUCTIONS:
Deseed and roughly chop the pumpkin
Peel and chop the shallots
Peel and food process the ginger (or finely grate it)  
Place the pumpkin, shallots, ginger and some oil in a large saucepan and sauté until soft.
Add the stock, coconut milk and chilli powder.
Season, then bring to a boil and simmer for 40 minutes.
Pick and (finely chop the herbs just before serving).
Pour into a food processor for a few secs then
Serve with the fresh herbs, lime juice and a splash of coconut milk.

Simply delicious!
